Cheesy Chicken Nuggets

This would have to be one of my all time favourite low carb recipes. These nuggets are an absolute taste sensation and are bound to become a family favourite, as they are in this family.


500g Chicken Thigh Fillets, cut into nugget size pieces
1 Egg
1/4 tsp Salt
1/4 tsp Pepper
60g Almond Meal
1/2 tsp Paprika
1/2 tsp Cajun Spice
200g Mozzarella Cheese, grated
40g Parmesan Cheese


Preheat your oven to 200°C
Whisk your egg and add in the salt, pepper, paprika and cajun spice in a bowl.
Place cut up pieces of chicken in the bowl and coat with the egg mixture.
In a separate bowl, mix together the cheeses and almond flour.
Transfer chicken pieces into the cheese mix and coat each piece. Place individual chicken pieces on a baking tray that has been lined with baking paper.
Bake in the oven for 20-25 minutes.
