These sandwich rounds are a healthy alternative to bread slices and taste every bit as good as they look!


2 1/2 cups Almond Flour (aka Almond Meal)
1 cup plain organic Yoghurt
3 eggs
1 teaspoon Bicarb Soda
2 tablespoons organic Maple Syrup
1/4 cup Butter, melted
Parmesan Cheese, grated


Preheat the oven to 200°C
Place all ingredients into a bowl and whisk until smooth. A mixmaster will make this job much easier.
Line a baking tray or 2 with baking paper.
Spoon around 3 tablespoons of the mixture onto the baking paper and smooth out into a flattish circle with the back of your spoon. The amount you use will depend on the size of the round you'd like to achieve. Allow room in between each round so that they don't blend in with each other (approx. 5cm).
Sprinkle each round with a little parmesan cheese and dried parsley flakes.
Bake for 15 minutes.
Using a smooth knife, lift rounds and place on a wire rack to cool.

Additional Notes

You can sprinkle with whatever topping takes your fancy to spice these up a bit.

"Freezing the Sandwich rounds works out great. I put them in a plastic container with baking paper between the layers. I reheated them by microwave, mine is 1100watt, two took 20 seconds on baking paper."
