Wild Berry Cobbler
A deliciously light dessert that will have you coming back for more.


Ingredients

1 tablespoon coconut oil
2 cups frozen berries
1 lemon, juiced and 1/2 zested
2 eggs
2 tablespoons coconut oil
2 tablespoons honey
165ml coconut milk
4 drops vanilla essence
1/4 cup coconut flour
1/2 teaspoon baking powder
pinch of cinnamon
pinch of Himalayan rock salt

For Nut Topping
1/3 cup ground macadamias, walnuts, and almonds
Cinnamon


Instructions

Preheat oven to 220°C
Place 1 tablespoon of coconut oil, berries, the juice of 1 lemon, and the zest of half the lemon in a pie dish. Spread evenly.
In a mixing bowl place the eggs, coconut oil, honey, coconut milk, and vanilla and mix together.
Add in the rest of the ingredients and mix until it becomes a nice smooth batter.
Poor over the berry mixture and then dust with cinnamon then sprinkle with nut topping.
Bake in oven for approximately 30 minutes.


Additional Notes

Serve with whipped cream
