Cauliflower & Zucchini Fritters

These fritters are a tasty addition to any meal or can be enjoyed on their own as a snack.
Ingredients
1/2 head of Cauliflower, grated
1 Zucchini, grated
1 Onion, finely diced
3/4 cup grated Parmesan Cheese
1 tablespoon Almond Flour
2 Eggs, whisked
1 tablespoon Parsley, chopped
Salt & Pepper
Coconut Oil for frying
Instructions
Combine all ingredients (except coconut oil) in a bowl and mix well.
Heat coconut oil in frypan to a medium heat.
Scoop spoonfuls of the mixture into the frying pan and cook for 8-10 minutes on each side or until golden.
