Bacon & Zucchini Muffins

I adapted this recipe, a family favourite that I've had for years, to the LCHF lifestyle. You can make this as a slice or as muffins, the choice is yours.


Ingredients

375 grams zucchini, grated
1 large onion, chopped
3 rashers bacon, chopped
1 cup cheese, grated
1 cup almond flour
1 teaspoon bi-carb soda
1/2 cup olive oil
5 eggs, whisked
salt & pepper


Instructions

Mix all ingredients in a bowl. Pour into a greased lamington tin (slice) or greased muffin trays (muffins).
Bake at 210°C for 30 - 40 minutes



Additional Notes

Makes 18 muffins.
Serve with fresh salad.
