Chicken Patties

These patties are a quick and easy healthy meal for the whole family.
I love the flavours of the ginger and coriander, my new favourite culinary loves :)


500grams chicken mince
1 finely chopped medium brown onion
1/2 finely chopped red capsicum
1 finely chopped carrot
1 tablespoon of freshly chopped coriander
1cm finely chopped ginger
1 finely chopped garlic
salt and pepper


Mix all ingredients together in a bowl and then mould into patties with your hands.
Place patties in a frying pan in melted butter and press down tops to flatten. Cook on a medium heat for around 10 minutes each side, or until the chicken is cooked in the middle of the patty.

Additional Notes

Enjoy with a beautiful fresh salad in Summer or hot veggies in Winter.
