Low Carb Lunch Recipes and Ideas

This is a simple dish we throw together regularly when we have leftovers in the fridge from the night befores dinner. Today for example we had leftovers from a beautiful pork roast. 5 Minutes later, we have lunch on leftovers and salad.
Ingredients
Leftover Meat
Lettuce
Tomato
Cucumber
Raw Beetroot
Carrot
Spanish Onion
Jarlsberg Cheese
Instructions
1. Dice the tomato, cucumber into sizes you like.
2. Finely chop the beetroot and carrot (or grate it).
3. Place the lettuce in a bowl and add the rest of the salad on top.
4. Slice some strips of Jarlsberg cheese, and lay on top of the leftover meat and heat on a medium setting until the meat and cheese are done.
5. Slice the meat and put on top of the salad.
Additional Notes
This is more of a meal idea than a recipe. You can add any salad you like to your bowl... Mushroom, avocado, capsicum, celery etc)
Just add what you like. The whole idea is a quick salad with leftovers from a previously cooked meal.
