While you can cook this on its own in the oven, nothing will quite compare to cooking it in the fat of your roasting pork.
Ingredients
Kent Pumpkin
Dried Rosemary
Dried Thyme
Instructions
1. Peel and chop pumpkin into rough 3cm cubes.
2. Place in baking tray roughly an hour before your roast is due to come out. Sprinkle with herbs. If cooking on its own it will take roughly an hour at around 210°C.
3. Remove from oven when pumpkin is soft and place in a bowl and give it a light mash.
4. Serve and enjoy :)
