Watermelon Cake

I originally found a similar recipe to this on a Paleo site but since we don't deprive ourselves of dairy products I have substituted coconut cream for REAL cream, although I'm sure coconut cream would be delicious too :)


Ingredients

Whole Watermelon
Seasonal Fruits
Your Favourite Nuts
Shredded Coconut
Thickened Cream
Rapadura Sugar
Vanilla


Instructions

1. Remove skin from watermelon and shape so that the bottom of the watermelon is flat. You don't want it to roll anywhere.
2. Whip up cream until it is stiff enough to hold its form. Add sugar (approx. 1 tablespoon) and a drop or two of vanilla to taste.
3. Place your watermelon on the plate you will want to serve it from as you won't want to move it once you start to decorate.
4. Using a spatula, ladle the whipped cream over the outside of the watermelon until it is fully covered in cream.
5. Sprinkle the cream with coconut and decorate with your fruit and nuts.


Additional Notes

If you are planning on traveling with this cake you might want to consider decorating it upon arrival at your destination. It can be rather awkward to carry around, as well as heavy.
