This might be your last breakfast recipe! Creamy scrambled eggs with salami, almonds and spinach topped with a the obligatory rasher of bacon. Serves 2.
Ingredients
5 eggs
25g butter
60mls thickened cream
1 cloved garlic, minced
40g salami, diced
12 almonds, finely chopped
1 handful spinach leaves
2 rashers bacon
Mixed herbs
Pinch salt and pepper
Instructions
Pre heat oven to 220ÂșC
Place bacon in a baking dish, cook for 10mins, turn and cook for a further 3-4mins.
Meanwhile; crack the eggs into a bowl, add cream, garlic, salt and pepper, and a dash of mixed herbs. Whisk well and set aside.
Melt the butter in a frying pan on medium/high, add the salami and almonds and cook for 3-5mins. Reduce heat to medium. Pour in the egg mix and stir well. After about 2 mins, throw in the spinach leaves and continue to stir. Remove once the eggs are no longer runny, but a nice creamy consistency. Serve with bacon and enjoy!
